We were all told vegetable oils were better for us because they were poly-unsaturated. However, this is far from the truth. Being unsaturated, actually makes them more unstable and harmful to us. These oils such as canola, soybean, safflower, corn and other nut and seed oils become rancid when exposed to oxygen and high temperatures.
They produce large amounts of free radicals in the body that cause aging, clotting, inflammation, cancer and weight gain.
Unfortunately the information promoting these vegetable oils and claiming saturated fats are the ones causing heart problems and other serious illnesses came from the vegetable oil industry. They were on a campaign to promote their cheaper and more accessible oils. It sure is hard for the proper information to get out to the mass public when they had such a large scale anti-saturated fat campaign for so long. However, times are changing and slowly the correct information is coming around without someone making a profit.
The other misconception of fats is that they will make you fat. The wrong type of fat will, like trans fats and vegetable oils. However, the good fats will actually help you lose weight by its ability to help stimulate your metabolism and increase the activity of the thyroid. One of the best sources of good fats come from Coconuts.
Coconut oil not only taste delicious and is great for your skin, it can withstand higher temperatures so you can cook with it without it becoming rancid.

Extra Virgin Olive oil is also a wonderful oil for you. However, it does get rancid quickly and oxidizes with cooking, so use this for your salads. Use Coconut oil when doing any cooking, baking, or making smoothies. You will find your skin getting better, having more energy and even slimming down.
